How to make this hot honey Mexicana cheese burrito bowl (Step by Step)
Start by frying your beef mince in a pan over medium heat. Break it up as it cooks so you get those nice browned bits. This is where the flavor starts building.
While that cooks, mix your honey, hot sauce, and chilli flakes in a small bowl. Set it aside. This is your magic sauce.

Once the beef is browned, add the taco seasoning and smoked paprika. Pour in about 50ml of water, stir everything together, and let it simmer for a couple of minutes. The sauce should thicken slightly and coat the beef.

Now add about one and a half teaspoons of the hot honey mixture into the beef. Stir it through so every bite gets that sweet and spicy flavor. Sprinkle over your grated Mexicana cheese, cover the pan, and let it melt.

At the same time, heat your microwave rice and prep your toppings. Think sweetcorn, tomatoes, onion, and lettuce.

To assemble, divide the rice between bowls, top with the cheesy beef, then pile on your fresh toppings. Finish with a drizzle of nacho cheese dip and a little extra hot honey if you like it bold.

How long it takes + easy serving ideas
This high protein burrito bowl takes about 15 minutes from start to finish. It’s one of those recipes you can throw together even when you’re tired.
I love serving it with a small portion of tortilla chips on the side for crunch. You can also add avocado, sour cream, or even black beans if you want to bulk it up. It’s super flexible and works for lunch or dinner.

- Sweet and spicy flavor combo is addictive

Tips, swaps, and fun variations
If you don’t have Mexicana cheese, chilli cheddar works just as well. You can even use a regular cheddar and add a pinch of extra chilli flakes.
For a lighter option, swap beef mince for turkey or chicken. It still tastes amazing and keeps the protein high.
Not a fan of spice? Reduce the hot sauce and chilli flakes. You’ll still get that hint of sweetness from the honey.
You can also turn this into a burrito wrap instead of a bowl. Or load it onto nachos for a fun twist.
Storing leftovers and meal prep tips
Store any leftovers in an airtight container in the fridge for up to 3 days. Keep the fresh toppings separate if possible so they stay crisp.
To reheat, warm the beef and rice in the microwave until hot, then add your toppings after. It’s great for meal prep because everything holds up really well.
