Ingredients
  

  • 250 g lean beef mince
  • 1 tbsp taco seasoning
  • 1 tsp smoked paprika
  • 25 g honey
  • 1 tbsp hot sauce
  • Pinch of chilli flakes
  • 40 g Mexicana cheese grated
  • 1 x 250g microwave Mexican-style rice
  • ½ small red onion sliced
  • 40 g sweetcorn
  • 8 cherry tomatoes quartered
  • 100 g shredded lettuce
  • 20 g nacho cheese dip
  • Optional: tortilla chips

Method
 

  1. Heat a pan over medium heat and cook the beef mince until browned, breaking it apart as it cooks.
  2. In a small bowl, mix honey, hot sauce, and chilli flakes. Set aside.
  3. Add taco seasoning and smoked paprika to the beef. Pour in 50ml water, stir, and simmer for 2 to 3 minutes until thickened.
  4. Stir in 1½ tsp of the hot honey mixture.
  5. Sprinkle cheese over the beef, cover, and let it melt.
  6. Heat the rice according to packet instructions.
  7. Assemble bowls with rice, cheesy beef, and toppings.
  8. Drizzle with nacho cheese dip and extra hot honey if desired.

Notes

  • Adjust spice level by reducing hot sauce or chilli flakes
  • Swap beef for chicken or turkey for a lighter option
  • Use any cheese you have if Mexicana isn’t available
  • Don’t skip browning the beef properly, it adds so much flavor
