Ingredients you’ll need

  • 480g skinless chicken breast, cooked and shredded
  • 60g diced and cooked bacon (or turkey bacon)
  • 1 jalapeño, diced
  • 15g sliced spring onion
  • 90g low fat grated cheese
  • 120g light cream cheese (or blended low fat cottage cheese)
  • 15g minced garlic
  • Ranch seasoning
  • 12 mini corn tortillas, steamed

Optional toppings:

  • Low fat Greek yoghurt mixed with ranch seasoning
  • Bacon bits
  • Extra spring onion

How to make crispy jalapeño popper chicken taquitos

Start by adding your shredded chicken to a large bowl. This is the base of your filling, so make sure it is nicely cooked and easy to shred.

Next, toss in the cooked bacon, diced jalapeño, spring onion, low fat cheese, cream cheese, minced garlic, and ranch seasoning. Mix everything together until it is creamy and well combined. You want every bite to have a little bit of everything.

Now take your steamed corn tortillas. This step is important because it keeps them from cracking when you roll them. Spoon the mixture evenly into each tortilla and roll them up tightly.

Place the taquitos seam side down on a tray. Lightly spray them with cooking oil to help them crisp up beautifully.

Air fry or bake until golden and crispy, flipping halfway through. Once done, they should be crunchy on the outside and creamy on the inside.

Quick to make and even easier to serve

These taquitos come together fast. Prep takes about 15 minutes, and cooking is around 10 to 25 minutes depending on your method.

Serve them with a drizzle of low fat ranch made with Greek yoghurt, or keep it simple with a side salad. They also pair perfectly with a fresh salsa or even some guacamole if you want to level things up.

Reasons you’ll fall in love with these

  • High protein and low calorie, perfect for weight loss goals
  • Super crispy outside with a creamy, flavorful filling
  • Easy to meal prep and store for later
  • Budget friendly ingredients you probably already have
  • Customizable with different fillings and spice levels
  • Great for lunchboxes, snacks, or quick dinners

Tips, swaps, and fun variations

If you are sensitive to spice, you can remove the seeds from the jalapeño or swap it for a milder pepper. Still delicious, just less heat.

Want even more protein? Use blended cottage cheese instead of cream cheese. It makes the filling extra creamy while boosting protein.

Storage and meal prep tips

Store any leftovers in an airtight container in the fridge for up to 4 days. They reheat really well in the air fryer, which helps bring back that crispy texture.

If you are meal prepping, you can assemble them ahead of time and cook when ready. You can also freeze them before cooking. Just thaw slightly and bake or air fry as usual.
