Ingredients
  

  • 480 g cooked shredded chicken breast
  • 60 g cooked bacon diced
  • 1 jalapeño diced
  • 15 g spring onion sliced
  • 90 g low fat grated cheese
  • 120 g light cream cheese
  • 15 g minced garlic
  • Ranch seasoning to taste
  • 12 mini corn tortillas steamed
Optional
  • Low fat Greek yoghurt
  • Extra ranch seasoning
  • Bacon bits
  • Spring onion

Method
 

  1. Preheat your air fryer or oven to 200°C (400°F).
  2. In a large bowl, combine shredded chicken, bacon, jalapeño, spring onion, cheese, cream cheese, garlic, and ranch seasoning. Mix well.
  3. Steam tortillas in the microwave with a damp paper towel for 45 seconds.
  4. Spoon filling evenly into each tortilla and roll tightly.
  5. Place seam side down on a tray and lightly spray with cooking oil.
  6. Air fry for 10 to 15 minutes or bake for 20 to 25 minutes, flipping halfway.
  7. Cook until golden and crispy. Serve with optional toppings.

Notes

  • Do not skip steaming the tortillas. It prevents cracking
  • Use cottage cheese for a higher protein option
  • Adjust jalapeño based on your spice preference
  • Do not overfill the tortillas or they may burst
