How to make this High Protein Loaded Taco Street Corn Bowl
Cut your potatoes into bite-sized cubes so they cook evenly. Toss them with garlic powder, smoked paprika, salt, pepper, and a light spray of oil.
Air fry at 400°F until crispy and golden. Shake halfway through for even cooking.

While the potatoes cook, heat a pan over medium-high heat. Add your diced onion and let it soften until fragrant.
Toss in the ground beef and cook until browned, breaking it apart as it cooks.
Once browned, add taco seasoning, beef broth, and bouillon. Stir well so everything is coated and flavorful.

Let it simmer for a few minutes. Then mix in the street corn and optional cheese until everything is warm and combined.
For the sauce, blend all the chili-lime sauce ingredients until smooth and drizzleable.

Finally, assemble your bowls. Start with potatoes, add the beef mixture, then top with guacamole, pico, cilantro, and a generous drizzle of sauce.

Tips, variations, and easy swaps
If you want to switch things up, try using ground chicken or turkey instead of beef. It still tastes amazing and slightly lowers the fat.
No air fryer? No problem. Roast the potatoes in the oven at 220°C until crispy.
For extra heat, add more chipotle or a dash of hot sauce to the chili-lime sauce. If you prefer it milder, reduce the chipotle and add a bit more yogurt.
You can also turn this into a low-carb version by swapping potatoes for cauliflower.
Storage and meal prep
Store everything in airtight containers in the fridge for up to 4 days. Keep the sauce separate if possible to maintain freshness.
To reheat, microwave the potatoes and beef mixture until warm, then add fresh toppings and sauce afterward. This keeps everything tasting fresh and not soggy.
