Ingredients
  

  • 600 g russet potatoes cubed
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper
  • Olive oil spray
  • lb lean ground beef 93/7
  • 1 small onion diced
  • 1 packet taco seasoning
  • ¼ cup beef bone broth
  • 1 tbsp beef bouillon
  • cups frozen street corn
  • ½ cup shredded cheddar optional
  • ½ cup light guacamole
  • ½ cup pico de gallo
  • Fresh cilantro
Sauce
  • ½ cup non-fat Greek yogurt
  • 1 roasted red pepper
  • 1 tbsp light mayo
  • 1 chipotle pepper
  • Juice of 1 lime
  • ½ tsp honey
  • Pinch salt

Method
 

  1. Cube potatoes and season with garlic powder, paprika, salt, and pepper. Air fry at 400°F until crispy.
  2. Sauté onion in a pan until soft. Add ground beef and cook until browned.
  3. Stir in taco seasoning, broth, and bouillon. Simmer for a few minutes.
  4. Add street corn and cheese. Mix until combined.
  5. Blend all sauce ingredients until smooth.
  6. Assemble bowls with potatoes, beef mixture, toppings, and sauce.

  • Cut potatoes evenly for the best texture
  • Don’t skip the bouillon. It boosts flavor
  • Adjust chipotle to control spice level
