How to Make a High Protein McGriddle Crunch Wrap

Making this high protein McGriddle crunch wrap is easier than it looks. The recipe is built in layers, but each component is very simple.

Start by making the protein pancakes. In a bowl, mix the dry ingredients : flour, coconut flour, protein powder, sweetener, baking powder, and a pinch of sea salt. Then add the egg whites and fat free milk. Stir until you have a thick pancake batter.

Cook the pancakes in a preheated pan over medium heat. Add a drizzle of sugar free pancake syrup on top before flipping so the sweetness soaks into the pancake. Repeat until you have three pancakes.

Next, cook the center cut bacon in the oven until crispy.

While the bacon cooks, mix the lean ground beef and turkey sausage together. Form six thin patties and cook them in a skillet until browned and fully cooked.

For the cheesy egg pocket, cook egg beaters in a pan with salt and pepper until set. Place the cheese in the center and fold the eggs into a pocket shape.

Now it is time to assemble. Layer the pancake, egg pocket, sausage patty, bacon, and a drizzle of syrup on a tortilla. Add a small piece of tortilla on top to help seal it.

Air fry until golden and crispy.

How Long It Takes + Serving Ideas

One of the best things about this high protein McGriddle crunch wrap is that it does not take all morning to make.

The entire recipe comes together in about 35 minutes, including cooking the bacon, pancakes, sausage patties, and eggs. Once everything is ready, the air fryer only needs about 5 minutes to crisp the crunch wrap perfectly.

These wraps are amazing served fresh while the tortilla is crispy. I love pairing them with fresh fruit, a smoothie, or a simple iced coffee.

They also work great as a high protein lunch or a satisfying post workout meal. Because each wrap is so filling, you really do not need much else alongside it.

It honestly feels like a cheat meal, but the nutrition profile tells a completely different story.

Helpful Tips, Variations, and Ingredient Swaps

A few small tips can make this recipe even better. First, make sure your sausage patties are thin. Thick patties can make the crunch wrap harder to fold and seal properly.

If you want an even sweeter pancake flavor, you can add a dash of vanilla extract or cinnamon to the pancake batter.

For a dairy free option, swap the milk for unsweetened almond milk and use dairy free cheese. You can also experiment with some fun variations.

Spicy version: Add crushed red pepper or hot sauce to the eggs or sausage mixture.

Chicken breakfast wrap: Replace the beef and sausage mixture with lean ground chicken.

Storage and Meal Prep Tips

Once cooked, let them cool completely before storing. Wrap each crunch wrap in foil or place them in an airtight container in the refrigerator.

They stay fresh for about 3 to 4 days. To reheat, place the wrap in the air fryer at 350°F for about 4 to 5 minutes until heated through and crispy again. A skillet works well too if you want to restore that crunchy exterior.
