Combine flour, protein powder, coconut flour, sweetener, baking powder, and salt in a bowl. Add milk and egg whites and mix until a thick batter forms.
Heat a pan over medium heat. Add one third of the batter to the pan and spread into a pancake. Drizzle a little sugar free syrup on top. Cook until absorbed, then flip and cook through. Repeat for remaining pancakes.
Bake the bacon at 400°F for about 15 minutes until crispy.
Mix lean ground beef and turkey sausage together. Form six thin patties, season with salt, and cook in a skillet until browned and cooked through.
Pour egg beaters into a pan over medium heat. Season with salt and pepper. Cook until set, place cheese in the center, and fold into a pocket shape.
Assemble the wrap by layering pancake, egg pocket, sausage patty, bacon, and syrup on a tortilla. Add a small piece of tortilla on top to help seal.
Spray with cooking spray and air fry at 400°F for about 5 minutes until crispy.
