Ingredients
  

Protein Pancakes
  • 60 g all purpose flour
  • 40 g vanilla whey casein blend protein powder
  • 12 g coconut flour
  • 6 g zero calorie sweetener
  • 5 g baking powder
  • Pinch of sea salt
  • 180 g fat free milk
  • 75 g egg whites
Filling
  • 8 oz 96/4 lean ground beef
  • 8 oz reduced fat turkey sausage
  • 4.5 slices center cut bacon
  • 450 g egg beaters
  • 42 g 2% Colby Jack cheese
  • 4 burrito tortillas
  • 180 g sugar free pancake syrup

Method
 

  1. Combine flour, protein powder, coconut flour, sweetener, baking powder, and salt in a bowl. Add milk and egg whites and mix until a thick batter forms.
  2. Heat a pan over medium heat. Add one third of the batter to the pan and spread into a pancake. Drizzle a little sugar free syrup on top. Cook until absorbed, then flip and cook through. Repeat for remaining pancakes.
  3. Bake the bacon at 400°F for about 15 minutes until crispy.
  4. Mix lean ground beef and turkey sausage together. Form six thin patties, season with salt, and cook in a skillet until browned and cooked through.
  5. Pour egg beaters into a pan over medium heat. Season with salt and pepper. Cook until set, place cheese in the center, and fold into a pocket shape.
  6. Assemble the wrap by layering pancake, egg pocket, sausage patty, bacon, and syrup on a tortilla. Add a small piece of tortilla on top to help seal.
  7. Spray with cooking spray and air fry at 400°F for about 5 minutes until crispy.

Notes

  • Make sausage patties thin so the crunch wrap folds easily.
  • A whey casein blend works best for fluffy protein pancakes.
  • Do not overfill the wrap or it may not seal properly.
  • Reheat in the air fryer to restore crispiness.
