Ingredients
  

  • 600 g chicken breast
  • 1 tsp salt
  • 1.5 tsp smoked paprika
  • 1 tsp chilli powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp coriander powder
  • 1 tsp olive oil
  • 340 ml fat free evaporated milk
  • 20 g parmesan cheese
  • 1 to 3 tsp chipotle sauce
  • 90 g light cream cheese
  • 320 g pasta
  • 1 brown onion diced
  • 6 garlic cloves diced
  • 1 tsp chicken bouillon
  • 2 tsp smoked paprika

Method
 

  1. Season chicken with spices and olive oil.
  2. Blend evaporated milk, parmesan, chipotle sauce, and cream cheese.
  3. Cook chicken until golden and fully cooked. Set aside.
  4. Cook pasta and reserve some pasta water.
  5. Sauté onion and garlic in the same pan.
  6. Add blended sauce, bouillon, and paprika. Simmer until thick.
  7. Stir in pasta and a splash of pasta water.
  8. Slice chicken and add on top or mix through.
  9. Serve warm and enjoy.

Notes

  • Adjust chipotle sauce based on spice preference
  • Add pasta water slowly to control sauce consistency
  • Do not overcook chicken to keep it tender
  • Use freshly grated parmesan for best flavor
