Method
- Add all dry ingredients to a bowl, excluding chocolate chips. Mix well to remove clumps.
- Add pumpkin, syrup, and egg. Stir until a thick batter forms.
- Melt 15g chocolate chips in the microwave for about 40 seconds.
- Fold melted chocolate into the batter.
- Transfer the mixture into a 6.5-inch cast iron skillet.
- Sprinkle remaining chocolate chips on top.
- Air fry at 300°F (150°C) for 6 minutes.
- Let cool slightly, then serve and enjoy.
Notes
- Keep an eye on cooking time to avoid drying it out
- Add a splash of milk if your batter feels too thick
- Pumpkin can be swapped with yogurt or banana
- A protein blend gives the best texture, but whey alone works
