Ingredients
  

  • 40 g vanilla whey/casein blend protein powder
  • 20 g unsweetened dark cocoa powder
  • 15 g all purpose flour
  • 4 g zero calorie sweetener
  • 3 g baking soda
  • 1 Pinch of sea salt
  • 80 g canned pumpkin
  • 30 g sugar free pancake syrup
  • 1 large egg (room temperature)
  • 15 g mini chocolate chips (melted)
  • 7 g mini chocolate chips (for topping)

Method
 

  1. Add all dry ingredients to a bowl, excluding chocolate chips. Mix well to remove clumps.
  2. Add pumpkin, syrup, and egg. Stir until a thick batter forms.
  3. Melt 15g chocolate chips in the microwave for about 40 seconds.
  4. Fold melted chocolate into the batter.
  5. Transfer the mixture into a 6.5-inch cast iron skillet.
  6. Sprinkle remaining chocolate chips on top.
  7. Air fry at 300°F (150°C) for 6 minutes.
  8. Let cool slightly, then serve and enjoy.

Notes

  • Keep an eye on cooking time to avoid drying it out
  • Add a splash of milk if your batter feels too thick
  • Pumpkin can be swapped with yogurt or banana
  • A protein blend gives the best texture, but whey alone works
