Ingredients
  

  • 800 g sweet potatoes, cubed
  • 2 lb lb boneless skinless chicken thighs, cubed
  • Olive oil spray
  • Salt and pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tbsp olive oil
  • 3 tbsp honey
  • 2 tbsp soy sauce or coconut aminos
  • 1 tsp minced garlic
  • 1 tbsp sriracha (optional)
  • ½ cup cup non-fat Greek yogurt
  • 1-2 tbsp lime or lemon juice
  • ½ tbsp garlic powder
  • ½ cup guacamole
  • ½ cup pico de gallo

Method
 

  1. Preheat air fryer to 400°F. Toss sweet potatoes with olive oil spray, salt, and pepper. Air fry 18–20 minutes, shaking halfway, until tender and golden.
  2. Season chicken with salt, pepper, garlic powder, and smoked paprika.
  3. Heat olive oil in a skillet over medium-high heat. Cook chicken 5–6 minutes until golden and cooked through.
  4. Reduce heat to medium. Add honey, soy sauce or coconut aminos, garlic, and sriracha. Stir 1–2 minutes until sticky and glazed.
  5. Whisk yogurt, honey, citrus juice, garlic powder, and salt until smooth.
  6. Assemble bowls with sweet potatoes and chicken. Top with guacamole, pico, and drizzle sauce.

Notes

For lower carb, substitute cauliflower for sweet potatoes and sugar-free honey for regular honey.
