Ingredients
  

  • 6 small sweet potatoes
  • 1 lb lean ground beef
  • 1 tsp olive or avocado oil
  • 1 tbsp chipotle powder
  • 1 tbsp garlic powder
  • 1 tbsp oregano or thyme
  • 1 tbsp sweet paprika
  • salt and pepper
Toppings
  • 1 avocado sliced
  • ½ red onion diced
  • Fresh cilantro
Sauce
  • 2 tbsp mayonnaise
  • ¼ cup sriracha
  • 2 tbsp rice vinegar
  • ½ tsp soy sauce
  • 2 tsp monk fruit sweetener
  • Juice of 1 lime
  • 1 garlic clove
  • 1 scallion

Method
 

  1. Preheat oven to 350°F and roast sweet potatoes for about 75 minutes until soft.
  2. Heat oil in a pan and cook ground beef, breaking it apart as it cooks.
  3. Season beef with chipotle powder, garlic powder, oregano, paprika, salt, and pepper. Cook until browned.
  4. Mix all sauce ingredients in a bowl until smooth. Adjust to taste.
  5. Slice open roasted sweet potatoes and mash slightly.
  6. Fill with cooked beef, avocado, onion, and cilantro.
  7. Drizzle with sauce and add optional toppings like chili flakes.

Notes

  • Roast at higher heat if short on time, but low and slow gives better texture
  • Adjust spice level by reducing or increasing sriracha
  • Swap beef for ground turkey or chicken if preferred
  • Don’t skip browning the beef properly for maximum flavor
