Method
- Preheat oven to 350°F and roast sweet potatoes for about 75 minutes until soft.
- Heat oil in a pan and cook ground beef, breaking it apart as it cooks.
- Season beef with chipotle powder, garlic powder, oregano, paprika, salt, and pepper. Cook until browned.
- Mix all sauce ingredients in a bowl until smooth. Adjust to taste.
- Slice open roasted sweet potatoes and mash slightly.
- Fill with cooked beef, avocado, onion, and cilantro.
- Drizzle with sauce and add optional toppings like chili flakes.
Notes
- Roast at higher heat if short on time, but low and slow gives better texture
- Adjust spice level by reducing or increasing sriracha
- Swap beef for ground turkey or chicken if preferred
- Don’t skip browning the beef properly for maximum flavor
