These protein chocolate chip cookie dough dessert pockets are a low calorie, high protein treat made in the air fryer. Crispy on the outside, soft and chocolatey on the inside, they’re perfect for satisfying sweet cravings without guilt.

Ingredients
  

For the cookie dough filling:
  • 5 low carb tortillas
  • 90 g vanilla whey/casein protein powder
  • 45 g powdered protein cookie butter
  • 22 g powdered peanut butter
  • 12 g sugar free cheesecake pudding mix
  • 8 g zero calorie sweetener
  • Pinch of sea salt
  • 45 g mini chocolate chips
  • Cold water as needed
For the protein icing
  • 30 g vanilla whey/casein protein powder
  • 15 g powdered sugar
  • 4 g sugar free cheesecake pudding mix
  • Water as needed

Method
 

  1. In a bowl, mix all dry ingredients for the cookie dough except the chocolate chips.
  2. Slowly add cold water, stirring until a thick cookie dough consistency forms.
  3. Fold in the mini chocolate chips.
  4. Cut tortillas in half and shape into pockets or cones.
  5. Fill each with cookie dough and press edges closed.
  6. Lightly spray both sides with cooking spray.
  7. Air fry at 400°F for 4 to 5 minutes until golden.
  8. Mix icing ingredients with a little water until smooth.
  9. Drizzle icing over warm pockets and enjoy.

Notes

  • Add water slowly to avoid making the dough too runny
  • Let the mixture sit if it feels too soft, it will thicken
  • Swap chocolate chips for white chocolate or dark chocolate
  • Oven baking works if you don’t have an air fryer
  • Don’t overfill the pockets or they may open while cooking
