Method
- Preheat your oven to 200°C and line a baking dish.
- Add cream cheese, egg, vanilla, Greek yoghurt, sweetener, and protein powder to a blender.
- Blend until smooth and creamy.
- Pour the mixture into the prepared baking dish.
- Bake for 25 minutes until set but slightly soft in the center.
- Let it cool, then refrigerate for 1 hour.
- For the glaze, heat strawberries and sweetener in a pan.
- Blend until smooth, then return to heat and add cornflour slurry to thicken.
- Spread glaze over the cheesecake.
- Add toppings if desired and chill for another 30 minutes.
- Slice into 6 servings and enjoy.

- Use flavored Greek yoghurt for extra sweetness and flavor
- Blend thoroughly to avoid a grainy texture
- Do not overbake. The center should remain slightly soft
