Ingredients
  

Cheesecake Base
  • 150 g light cream cheese
  • 1 egg
  • 2 tsp vanilla extract
  • 400 g low fat Greek yoghurt
  • 15 g sweetener monk fruit or stevia
  • 40 g protein powder vanilla or strawberry
Strawberry Glaze
  • 200 g strawberries
  • 35 g sweetener
  • 5 g cornflour mixed with water
Optional Toppings:
  • 1 crushed biscuit or graham cracker
  • 60 g sliced strawberries
  • 20 g melted white chocolate

Method
 

  1. Preheat your oven to 200°C and line a baking dish.
  2. Add cream cheese, egg, vanilla, Greek yoghurt, sweetener, and protein powder to a blender.
  3. Blend until smooth and creamy.
  4. Pour the mixture into the prepared baking dish.
  5. Bake for 25 minutes until set but slightly soft in the center.
  6. Let it cool, then refrigerate for 1 hour.
  7. For the glaze, heat strawberries and sweetener in a pan.
  8. Blend until smooth, then return to heat and add cornflour slurry to thicken.
  9. Spread glaze over the cheesecake.
  10. Add toppings if desired and chill for another 30 minutes.
  11. Slice into 6 servings and enjoy.

Notes

  • Use flavored Greek yoghurt for extra sweetness and flavor
  • Blend thoroughly to avoid a grainy texture
  • Do not overbake. The center should remain slightly soft
  • Adjust sweetener based on your taste preference
  • Toppings are optional but add great texture and flavor
