Ingredients
  

  • 2 cups low fat cottage cheese
  • 4 eggs
  • 1 tsp vanilla extract
  • 4 tbps sugar free maple syrup
  • 1.25 cups self raising flour
  • 2 ripe bananas
  • cinnamon

Method
 

  1. Air fry bananas at 375°F for 8–10 minutes until caramelized.
  2. Blend cottage cheese until smooth.
  3. Add eggs, vanilla, and syrup. Blend again.
  4. Fold in self-rising flour gently.
  5. Mash bananas and fold into batter.
  6. Cook batter in greased muffin rings over medium heat until fluffy and golden.
