Ingredients
  

  • 1 ½ cups all-purpose flour
  • 3 scoops vanilla whey protein
  • ¾ cup cup zero-calorie sweetener
  • 1 tsp tsp baking powder
  • ½ tsp tsp baking soda
  • 1 pinch salt
  • 1 cup fat-free vanilla Greek yogurt
  • 3 eggs
  • cup unsweetened applesauce
  • 2 tbsp melted coconut oil
  • 1 tbsp melted butter
  • 1 tsp cake batter extract
  • 2 tbsp rainbow sprinkles
Protein Icing
  • ½ cup fat-free vanilla Greek yogurt
  • 1 scoop vanilla whey protein
  • ½ cup zero-calorie confectioners sweetener

Method
 

  1. Preheat oven to 350°F and grease a loaf pan.
  2. Whisk dry ingredients together.
  3. Add wet ingredients and mix until just combined.
  4. Fold in sprinkles.
  5. Bake 40–45 minutes. Cool completely.
  6. Mix icing and spread over cake.

Notes

  • Whey protein is required for proper texture.
  • Do not ice while warm.
