Method
- Season the chicken with lime juice and spices. Mix well.
- Cook chicken in a pan over medium high heat for 4 minutes per side until fully cooked.
- Mix Greek yoghurt and chipotle sauce to make the dressing.
- Combine all pico ingredients in a bowl and mix well.
- Divide rice into four containers.
- Add lettuce, pico, corn, and black beans.
- Top with cooked chicken and drizzle with chipotle sauce.
