Ingredients
  

  • 600 g diced chicken breast
  • Juice from 1 lime
  • Salt garlic powder, onion powder, cumin, chilli powder, smoked paprika
  • 140 g low fat Greek yoghurt
  • 2 to 4 tsp chipotle sauce
  • 2 tomatoes diced
  • 1 jalapeño diced
  • 1 white onion diced
  • Fresh coriander
  • Juice from 2 limes
  • Salt pepper, garlic powder
  • 520 g cooked Mexican rice 130g per serving
  • Lettuce
  • 200 g corn
  • 240 g black beans
  • Chipotle sauce 35g per serving

Method
 

  1. Season the chicken with lime juice and spices. Mix well.
  2. Cook chicken in a pan over medium high heat for 4 minutes per side until fully cooked.
  3. Mix Greek yoghurt and chipotle sauce to make the dressing.
  4. Combine all pico ingredients in a bowl and mix well.
  5. Divide rice into four containers.
  6. Add lettuce, pico, corn, and black beans.
  7. Top with cooked chicken and drizzle with chipotle sauce.

Notes

  • Adjust chipotle sauce based on your spice preference
  • Do not overcook the chicken to keep it juicy
  • Swap rice for cauliflower rice for a lower carb option
  • Add avocado or cheese for extra flavor
