Ingredients
  

Chicken & Marinade
  • 180 g thinly cut chicken breast
  • 100 g low fat Greek yogurt
  • 1 squeeze lemon juice
  • 5 g - 5 g minced garlic
  • ½ tsp tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp coriander powder
  • Salt and pepper to taste
Toppings
  • - ½ tomato sliced
  • - 20 g red onion sliced
  • - Fresh parsley
Tzatziki Sauce
  • 75 g low fat Greek yogurt
  • 5 g minced garlic
  • 1 Tbsp tbsp grated cucumber
  • Dill
  • Salt
  • Squeeze of lemon juice
Garlic Flatbread
  • 60 g self raising flour
  • 75 g low fat Greek yogurt
  • Parsley flakes optional

Method
 

  1. In a bowl, mix yogurt, lemon juice, garlic, cumin, smoked paprika, coriander, salt, and pepper.
  2. Add the sliced chicken and coat well with the marinade.
  3. Prepare the tzatziki by mixing yogurt, cucumber, garlic, dill, lemon juice, and salt. Refrigerate.
  4. Combine flour and yogurt to form a dough. Knead lightly and roll into a flat circle.
  5. Cook the flatbread in a hot pan for about 2 minutes per side.
  6. Cook the marinated chicken using your preferred method until fully cooked.
  7. Spread tzatziki on the flatbread.
  8. Add tomato, onion, cooked chicken, and more sauce.
  9. Sprinkle parsley on top, wrap, and serve.

Notes

  • If the flatbread dough feels sticky, add small amounts of flour until workable.
  • Store bought flatbread can be used for convenience.
  • Cooking the chicken in a pan creates extra browning and flavor.
  • Thinly slicing the chicken helps it cook quickly and stay tender.
