Ingredients
  

  • 900 g diced Carisma potatoes
  • 1 teaspoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • teaspoons smoked paprika
  • 900 g diced chicken breast
  • ½ onion diced
  • 100 g light grated cheese
Toppings
  • 50 ml BBQ sauce
  • 50 ml ranch dressing
  • 80 g diced cooked bacon
  • Fresh parsley
Optional Low Calorie Ranch
  • 120 g low fat Greek yogurt
  • 50 ml light mayonnaise or light sour cream
  • 60 ml fat free buttermilk
  • 1 tablespoon ranch seasoning
  • 1 teaspoon fresh dill
  • ½ tablespoon lemon juice

Method
 

  1. Preheat air fryer or oven to 200°C (400°F).
  2. Toss diced potatoes with olive oil, garlic powder, salt, onion powder, and smoked paprika.
  3. Cook potatoes in the air fryer or oven until crispy and golden, about 20 to 25 minutes.
  4. Season diced chicken with the same spice mixture.
  5. Heat a large skillet over medium-high heat and sauté diced onion until softened.
  6. Add chicken and cook about 4 minutes per side until fully cooked.
  7. Add crispy potatoes to the skillet and drizzle with ranch dressing. Toss to combine.
  8. Sprinkle grated cheese over the top and heat until melted and bubbly.
  9. Finish with BBQ sauce, extra ranch, diced bacon, and parsley.
  10. Divide into four portions and serve.

Notes

  • Cut potatoes evenly so they cook at the same rate.
  • Turkey bacon or beef bacon can replace regular bacon.
  • Store bought light ranch dressing works if you want to skip the homemade version.
  • For extra spice, add chili flakes or hot sauce.
