Method
- Preheat oven to 180°C or 350°F and grease a muffin tin.
- Blend cottage cheese, eggs, vanilla, and sweetener until smooth.
- In a bowl, mix flour and protein powder.
- Pour wet mixture into dry ingredients and stir until smooth.
- Fold in blueberries gently.
- Divide batter evenly into muffin tin and top with extra blueberries.
- Bake for 15 to 18 minutes until set and lightly golden.
- Cool slightly, then serve warm.
Notes
- Use a whey casein blend protein powder for best texture
- Do not overmix the batter to keep muffins soft
- Swap blueberries with other fruits if desired
- Add a splash of milk if batter feels too thick
