Method
- Slice potato into fries and soak in cold water if time allows.
- Pat dry, spray lightly, and bake or air fry until crispy.
- Season fries immediately after cooking.
- In a pan, sauté diced onion until soft.
- Add tomato paste and BBQ sauce. Cook for 1 minute.
- Pour in chicken stock and stir in cream cheese and spices.
- Add shredded chicken and mix until fully coated.
- Plate fries, top with BBQ chicken, and sprinkle cheese.
- Let cheese melt, then add BBQ drizzle and green onions.
Notes
- Soaking fries helps them crisp up better
- Adjust spice level by reducing cayenne
- Use rotisserie chicken for convenience
- Don’t overcrowd fries when cooking
