Ingredients
  

BBQ Chicken
  • 130 g cooked chicken breast shredded
  • 1/4 red onion diced
  • 15 g tomato paste
  • 30 g BBQ sauce
  • 100 ml chicken stock
  • 15 g light cream cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp cayenne
  • 1/2 tsp salt
  • Cooking spray
Fries
  • 250 g raw potato
  • Cooking spray
  • Salt to taste
Toppings
  • 30 g low fat grated cheese
  • BBQ sauce drizzle
  • Chopped green onions

Method
 

  1. Slice potato into fries and soak in cold water if time allows.
  2. Pat dry, spray lightly, and bake or air fry until crispy.
  3. Season fries immediately after cooking.
  4. In a pan, sauté diced onion until soft.
  5. Add tomato paste and BBQ sauce. Cook for 1 minute.
  6. Pour in chicken stock and stir in cream cheese and spices.
  7. Add shredded chicken and mix until fully coated.
  8. Plate fries, top with BBQ chicken, and sprinkle cheese.
  9. Let cheese melt, then add BBQ drizzle and green onions.

Notes

  • Soaking fries helps them crisp up better
  • Adjust spice level by reducing cayenne
  • Use rotisserie chicken for convenience
  • Don’t overcrowd fries when cooking
