Ingredients
  

Chicken
  • 1.1 kg boneless skinless chicken breast (cut into 6 strips)
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper
  • ½ tsp black pepper
  • 1 tsp salt
  • 1 tsp garlic powder
Coating
  • 100 g potato starch
  • 200 g plain flour
  • 1 cup sparkling water
Sauce
  • 350 g light mayonnaise
  • 170 g low sugar ketchup
  • 45 g Worcestershire sauce
  • 1 tsp garlic powder
  • tsp salt
  • ½ tsp onion powder
  • 1 tsp black pepper
Fries
  • 400 g potatoes
  • 1 tsp salt
  • 1 tsp smoked paprika
  • Light cooking oil spray

Method
 

  1. Slice chicken into thin strips and season well.
  2. Mix flour and potato starch with the same seasonings.
  3. In a separate bowl, mix sparkling water with some flour mixture to create a wet batter.
  4. Add a few spoonfuls of wet batter back into the flour mixture to create clumps.
  5. Coat chicken in flour, dip in wet batter, then press back into flour firmly.
  6. Place in air fryer, spray evenly with oil, and cook until golden and crispy.
  7. Slice potatoes into fries, season, spray, and air fry or bake until crisp.
  8. Mix all sauce ingredients and refrigerate until thickened.
  9. Serve chicken, fries, and sauce together.

Notes

  • Press the flour firmly onto the chicken for the best crunch
  • Always spray evenly to avoid dry patches
  • You can halve the recipe if needed
  • Let the sauce chill for better flavor
