Ingredients
  

  • 300 g skinless chicken breast 2 fillets
Seasoning:
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp chilli powder
  • 1/2 tsp cayenne pepper
Coating
  • 40 g plain flour
  • 1/2 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp chilli powder
  • 2 g baking powder
  • 1 egg
Sauce
  • 40 g light mayonnaise
  • 1/3 tsp mustard powder
  • 1/2 tsp garlic powder
To serve
  • 2 brioche buns
  • Lettuce

Method
 

  1. Slice chicken breast into 2 even fillets.
  2. Season both sides with salt, garlic powder, onion powder, paprika, chilli powder, and cayenne.
  3. In a bowl, mix flour, garlic powder, paprika, chilli powder, and baking powder.
  4. Dip chicken into whisked egg, then coat in seasoned flour.
  5. Lightly spray with oil and air fry or bake until golden and cooked through.
  6. Mix sauce ingredients in a small bowl until smooth.
  7. Toast buns, spread sauce, add lettuce and chicken. Assemble and serve.

Notes

  • Add more cayenne for extra heat or reduce for a milder version
  • Baking powder helps create a crispier coating
  • Do not overcrowd the air fryer for best results
  • Swap mayo for a low-fat yogurt option if preferred
