Ingredients
  

  • 30 G vanilla whey/casein protein powder
  • 15 g PB powder
  • 15 g coconut flour
  • 6 g zero-calorie sweetener
  • 5 g baking powder
  • Pinch of salt
  • 50 g egg whites
  • 70 g plain non-fat Greek yogurt
  • 70 g unsweetened applesauce
  • 15 g mini chocolate chips
Cookie Sandwich Filling
  • 112 g fat-free whipped topping
  • 20 g cookies & cream protein powder
  • 10 g black cocoa powder
  • 3 g zero-calorie sweetener

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking tray with parchment paper.
  2. In a bowl, mix all dry cookie ingredients except chocolate chips.
  3. Add wet ingredients and mix until a smooth batter forms.
  4. Fold in chocolate chips.
  5. Scoop batter into 8 cookies and slightly flatten.
  6. Bake for 10 minutes. Let cool completely.
  7. In a separate bowl, gently fold together all filling ingredients.
  8. Spread filling onto 4 cookies, then top with remaining cookies.
  9. Freeze until firm.

Notes

  • Do not overbake. Cookies should stay soft
  • Use a whey-casein blend for best texture
  • Let cookies cool fully before assembling
  • Adjust sweetness to taste
  • Freezing is essential for the final texture
