Method
- Preheat oven to 350°F (175°C). Line a baking tray with parchment paper.
- In a bowl, mix all dry cookie ingredients except chocolate chips.
- Add wet ingredients and mix until a smooth batter forms.
- Fold in chocolate chips.
- Scoop batter into 8 cookies and slightly flatten.
- Bake for 10 minutes. Let cool completely.
- In a separate bowl, gently fold together all filling ingredients.
- Spread filling onto 4 cookies, then top with remaining cookies.
- Freeze until firm.
