Ingredients
  

  • 240 g plain non-fat Greek yogurt
  • 190 g 2% cottage cheese
  • 50 g Biscoff spread
  • 100 g egg whites
  • 35 g vanilla whey/casein blend protein powder
  • 15 g powdered peanut butter
  • 14 g sugar-free cheesecake pudding mix
  • 10 g zero-calorie sweetener
Optional
  • Biscoff cookie for topping

Method
 

  1. Add all ingredients to a blender and blend until completely smooth.
  2. Pour the batter evenly into silicone cupcake molds.
  3. Air fry at 250°F for 15–17 minutes until set.
  4. Let cool in the molds for 10 minutes.
  5. Transfer to the fridge and chill for 30–60 minutes.
  6. Add toppings of choice and serve chilled.

Notes

  • Blend thoroughly to avoid lumps from the cottage cheese.
  • Silicone molds make removal much easier.
  • Adjust sweetness to taste.
  • Do not overcook or they may become rubbery.
