Ingredients
  

  • 180 g extra lean beef mince
  • ½ white onion, diced
  • 4 low-carb mini tortillas
  • 4 slices cheddar cheese
  • Lettuce
  • onion
  • pickles
  • Salt
  • pepper
  • garlic powder
  • onion powder
  • smoked paprika
Sauce
  • 50 G light or fat-free mayonnaise
  • 8 g yellow mustard
  • ½ tbsp pickle juice
  • 1 tsp white vinegar
  • 10 g gherkin or sweet relish
  • 2-3 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder

Method
 

  1. Season beef and mix with onion.
  2. Form into four balls and press onto tortillas.
  3. Cook beef-side down on high heat for 1 minute.
  4. Flip, crisp tortilla side, and add cheese.
  5. Assemble with toppings and sauce.

Notes

  • Use keto tortillas for low net carbs.
  • Press beef thin for best texture.
  • Sauce can be made 3 days ahead.
